Chile is witnessing a rapid process of development and socio- cultural changes. During the last decades dietary changes have occurred, characterized by an increased consumption of cholesterol, saturated fats, sacarose and salt. This article aims to describe the cultural role in food selection, possible inter- relations between the biological and anthrological determinants and its impact on the genesis of adult disease (obesity, diabetes, hypertension, osteoporosis, and hyperlipidaemia). Strategies of nutritional education to promote a healthy lifestyle must consider the alimentary culture, the social and economic development, in order that education in public and school health programmes achieve a better impact
