The objective of this work was the evaluation of a kinetic model that represents the drying process of shrimp cephalothoraxes in thin layers. Various experiments were carried out in a fixed bed dryer with average surface air velocity varying from 0.2 to 0.4 m/s and temperature from 50 to 70o C. The drying-rate curves showed a period of initial adjustment followed by declining-rate periods; no constant-rate period was observed. Due to the characteristics of the raw material, it was considered that in the declining-rate period the moisture moved toward the surface mainly by molecular diffusion through the porous medium. Based on this, the kinetic study was carried out using a diffusion model. The validity of the model was evaluated using the correlation coefficient, the standard error, and the percentage of the average absolute error, finding that the kinetics of the drying method studied was well represented by the model employed.
