Abstract

This research presents the construction of a phenomenological-based semiphysical model of continuous alcoholic fermentation process with Saccharomyces cerevisiae. The structure of the model is obtained from the principles of conservation of mass and energy applied to the process. The parameters were obtained by application of the equation of transport phenomena and kinetics of microbial processes. The model includes the inhibitions of biomass, substrate and product, and the temperature effects on the parameters associated with the yeast metabolism. The simulation and validation showed that the model obtained can satisfactorily predicts the dynamic behavior of the process studied.
