The aim of this study was to evaluate the incidence of different ions on the thickness, transparency, water vapor permeability (WVP) and mechanical properties of binary biofilms of gellan gum. The gellan gum is an anionic linear heteropolysaccharide that due to its structural features can modify some physico mechanical and barrier properties of edible biofilms. The effect of cations on a tensile strength (TS), the elongation at break (EB) and WVP substantially increased by the amount of GBA present in binary biofilms. Biofilms based gellan gum and calcium, exhibit more desirable mechanical and barrier properties in comparison with binary biofilms and Na+. The presence of cations increase the TS and EB values but decrease moisture, WVP and transparency. These results are really promising and suggest the possibility of using combinations of gellan gum and calcium to be considered as a source of biodegradable packaging in food applications.
