The article examines the history ofpajarete, a selected wine from the deserts of northern Chile, since records began (1790) up to its recognition as an Appellation of Origin wine and subsequent projection. The paper is based on documents such as customs books, printing press, farmers' stories and trademark registrations. We show that the pajarete wine has existed for 225 years in Chile; it has remained as a chosen wine, which has been developed, marketed and consumed in small amounts.
